– 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized piece – 2 tablespoons soy sauce – 1 tablespoon oyster sauce – 1 tablespoon hoisin sauce

– 1 tablespoon rice vinegar – 1 tablespoon cornstarch – 1 teaspoon sesame oil – 1 tablespoon vegetable oil

1 onion, sliced 1 bell pepper, sliced 2 cloves garlic, minced 1 tablespoon grated ginger

– Salt to taste – Cooked rice, for serving – Sliced green onions for garnish

In a bowl whisk together soy sauce oyster sauce hoisin sauce rice vinegar cornstarch and sesame oil until well combined Set aside

Heat vegetable oil in a large skillet or wok over medium high heat

Add sliced onion and bell pepper and cook until they start to soften about 34 minutes

Add minced garlic and grated ginger to the skillet and cook for another 12 minutes until fragrant

Add the chicken pieces to the skillet and cook until they are browned and cooked through about 56 minutes

Pour the sauce mixture over the chicken and vegetables in the skillet Stir well to coat everything evenly

Season the dish with freshly ground black pepper crushed red pepper flakes if using and salt to taste Stir to combine

Cook the pepper chicken mixture for another 23 minutes allowing the sauce to thicken and coat the chicken and vegetables

Once the sauce has thickened and everything is heated through remove the skillet from heat

Serve the Chinese pepper chicken hot over cooked rice
