8 slices rye bread 1 lb corned beef, thinly sliced 1/2 lb Swiss cheese, sliced 1 cup sauerkraut, drained 1/2 cup Thousand Island dressing Butter for grilling

Butter one side of each slice of rye bread.

Assembling Sandwiches

On the non-buttered side of 4 slices, layer corned beef, Swiss cheese, and sauerkraut.

Dressing Up

Spread Thousand Island dressing on the non-buttered side of the remaining 4 slices.

Heat a griddle or skillet over medium heat. Grill the sandwiches until the bread is toasted, and the cheese is melted (about 3-4 minutes per side).
